How to Choose the Perfect Wedding Menu: A Caterer's Complete Guide

Your wedding menu isn't just about feeding guests—it's the heart of the celebration. As a caterer who's plated thousands of happy couples' big days across the Tampa Bay area, I've seen firsthand how the right food can turn a beautiful wedding into an unforgettable one. Guests may forget the exact shade of your flowers, but they'll remember the perfectly seared grouper with mango salsa or the interactive station that had everyone lining up for seconds.

The good news? Choosing your wedding menu in the Tampa/St. Pete area doesn't have to be overwhelming. With our year-round fresh ingredients, stunning waterfront venues, and vibrant local food scene, you have incredible options to make your day deliciously unique.

Why Your Wedding Menu Matters More Than You Think

Food is one of the few elements every single guest experiences. While the ceremony is emotional and the décor is visual, the menu is sensory—it engages taste, smell, and touch. A well-curated menu:

  • Sets the tone for your wedding (elegant beachfront, relaxed backyard, or upscale urban)

  • Reflects your personality as a couple

  • Keeps guests energized for dancing under the Florida stars

  • Creates lasting memories (and plenty of Instagram stories)

In Tampa Bay, your menu can also celebrate our beautiful location — think fresh Gulf seafood, citrus-bright flavors, and locally sourced produce.

Key Questions to Ask Before Choosing Your Menu

Before you start dreaming up dishes, answer these important questions:

  1. What’s your guest count and venue style?  Outdoor venues often work best with buffets, stations, or passed hors d’oeuvres, while ballrooms shine with plated dinners.

  2. What time of year are you getting married? Florida weddings have distinct seasons. Summer calls for light, refreshing dishes and plenty of hydration stations. Winter (our “high season”) allows for richer flavors. Spring and fall give you the best of both worlds.

  3. What’s your budget and priority? Be honest about numbers upfront. Great catering in Tampa Bay can fit many budgets when planned smartly.

  4. Any dietary considerations or guest preferences? With our diverse population, we commonly accommodate vegan, gluten-free, vegetarian, nut-free, and other needs.

  5. What’s your vibe as a couple? Do you want classic elegance, fun and interactive, or a mix of both?

Plated Dinners vs. Buffet vs. Food Stations

Here’s a breakdown of the most popular service styles we execute in the Tampa/St. Pete area:

Plated Dinners Elegant and controlled. Ideal for formal ballroom or upscale beach resort weddings. Guests get a beautifully presented plate, and timing is precise. Popular choices: Grilled local fish with citrus beurre blanc, short rib with Mascarpone mash, or vegetarian options like stuffed portobello with roasted vegetables.

Buffet Service Warm, abundant, and great for mingling. Works beautifully at many Tampa Bay venues. Guests love seeing and choosing their favorites. Pro tip: Add “action stations” (chef-carved NY Strip or fresh pasta station) to elevate it.

Interactive Food Stations Currently one of the most requested options in Tampa Bay. Guests love the experience! Popular local ideas:

  • Fresh Gulf seafood raw seafood station

  • Taco or Cuban-inspired station with mojo pork

  • Chef-attended pasta station

  • Build-your-own salad or grain bowl with local produce

  • Late-night stations (empanadas, sliders, or mini crabcake sandwiches)

Many couples choose a hybrid: plated first course + stations for the main meal.

Budgeting Tips for Tampa Bay Weddings

  • Focus on peak-season local ingredients — Florida citrus, fresh seafood, tomatoes, and herbs taste better and often cost less.

  • Consider the season — Summer menus with lighter fare can be more budget-friendly.

  • Prioritize what matters — Amazing appetizers and a wow-factor dessert station often make a bigger impression than a five-course plated dinner.

  • Ask about packages — Many Tampa Bay caterers offer inclusive packages that bundle food, service staff, and rentals.

Always request a custom proposal rather than just looking at “per person” pricing online.

Local Tampa/St. Pete Menu Inspiration

Incorporate the best of our region:

  • Seafood-forward — Key West pink shrimp, grouper, mahi, oysters, or stone crab (in season)

  • Cuban & Latin influences — Mojo-marinated proteins, arroz con pollo, plantains, black beans

  • Fresh & Bright — Citrus salads, mango salsa, heirloom tomatoes, and herbs

We can also weave in family recipes or signature cocktails that reflect your story.

Learn About Our History

Hello, we are Olympia Catering — and this is our story.

We’ve been a proud part of the Tampa Bay community for over a century, standing

strong in the heart of West Tampa, where the aroma of fresh Cuban bread, warm

pastries, and the salty breeze from the bay surrounds us every day.

Our story begins in 1924, when José and Carlotta Diaz emigrated from Spain and

opened a small bakery called La Paloma in historic Ybor City. Their dream was simple:

to bake with pride and serve their community well. As the years passed, their son

Joseph carried that dream forward. In 1950, he moved the business to North Howard

Avenue and gave us our name — Olympia.

What started as a neighborhood bakery grew into something much bigger. In 1993,

third-generation owner Darren Diaz took the helm and expanded our catering division

while preserving the family’s commitment to quality and tradition. Today, we remain

proudly family-owned and deeply rooted in West Tampa, serving as a living piece of

local history while embracing modern tastes and trends.

Whether you’re planning an intimate wedding on the beach, a large corporate gathering

downtown, or a joyful family celebration, we bring the same care, quality, and personal

touch to every event across the greater Tampa Bay area.

Weddings We love being part of wedding days. From elegant plated dinners to vibrant

cocktail receptions with beautiful food stations, our team works closely with you to

create a custom menu that reflects your vision. We cook fresh on-site, serve with

warmth and attention, and make sure every detail shines.

Corporate Events For business lunches, meetings, and office parties, we make things

effortless and delicious. Think gourmet sandwich platters, chef-inspired entrées, and

impressive charcuterie boards — delivered hot and on time so you can focus on what

matters.

Social & Private Celebrations Birthdays, anniversaries, fundraisers, and family

reunions — no matter the size — we bring the same creativity and care to every

gathering.

Our menus celebrate the best of Tampa Bay: American classics, Italian favorites,

Mediterranean flavors, Southern comfort, and the rich Latin influences that define our

region. You’ll often find expertly prepared Cuban sandwiches, fresh coastal seafood,

and Mediterranean spreads made with local ingredients and generations of family know-

how.

Why choose us?

 Over 100 years of experience — we’ve catered thousands of events and

perfected our craft along the way.

Bay’s history.
